The Dallas Cowboys selected Escobar in the second round of the 2013 NFL Draft. Escobar was a standout for San Diego State from 2010 to 2013, before being drafted by the Cowboys. Escobar played four more seasons for Dallas, scoring eight touchdowns.

In his rookie season, he had 9 receptions for 134 yards and two touchdowns. In 2014, Gavin was mostly used as a red zone target on special terms. Following that, he was unable to increase his role in the team’s offense in 2015, remaining as the team’s third-string tight end.
Gavin suffered a season-ending injury in the fourteenth game of the season when he tore his right Achilles tendon against the New York Jets. However, he recovered quickly from the injury and participated fully in training camp. He signed a one-year contract with the Kansas City Chiefs in March 2017. He was only on the team for a short time before being released by Kansas on September 2 for failing to clear Ross Travis on the depth chart.
On October 23, 2017, Escobar was signed by the Baltimore Ravens. He was brought in as a replacement for tight end Maxx Williams, who had re-injured his ankle. On November 28, Escobar was released by the team, making way for Danny Woodhead. The Cleveland Browns signed him to a reserve/future contract on January 15, 2018. He did, however, remain with the team until his release on April 12, 2018.
The Miami Dolphins signed him on April 16, 2018. Unfortunately, he was released twice by the team, once on September 1 and again on September 11. Following that, he joined the Alliance of American Football’s San Diego Fleet. Despite this, he was placed on the injured reserve list due to an injury. He caught 14 passes for 142 yards during his time with the Chargers.

He was married to Sarah, with whom he lived until his death. They had two children. Escobar was apparently a firefighter for the Long Beach Fire Department in California at the time of his death.
