Recipe:

Spice Rub

  • 1 ½ tsp dried oregano
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp garlic powder

Fish

  • Greek extra virgin olive oil
  • 5 lb/ 680.4 g cod fillet
  • Kosher salt
  • Black pepper

Once you have all your ingredients to hand grab your skillet, give your fillets a quick spice rub (with the above recipe), and grill the fish on medium-high heat with a little olive oil. Three minutes or so on each side should suffice; you’ll know it’s ready when the outside gets a golden crust, but the inside should be fully opaque and flake easily with a fork.

Instructions

First, combine the spices in a small bowl for the spice rub. Pat any moisture off of the fish fillets and season well on both sides before adding the spice rub.  Set aside while you prep the other ingredients. (toast the pita, prepare the salad, and put the tzatziki sauce in a ramekin for dipping).

Add a small amount of olive oil to a non-stick skillet, gently bring it to medium-high heat, and add your fillet(s) once the oil is ready (shimmering, not smoking). Grill on each side for around 3 minutes without moving for a crispy finish.

Serve hot, add a splash of fresh lemon juice, and wrap in a warm pita before adding a spoonful of tzatziki (to taste) and your salad.
